Do Ahead Breakfast
½ cup diced onion (red, yellow, white…whatever!) 1 cup grated cheddar cheese 1 cup grated mozzarella or Monterey Jack 8 eggs 3 cups milk Crumbled bacon or ham 6 slices bread Lightly spread bread with margarine or butter (I break the bread into chunks). Lined greased 9 x 13 pan with bread. Sprinkle onion, cheese, and bacon or ham over bread. Beat 8 eggs with 3 Cups of milk and salt to taste. Pour over bread, cheeses, etc. Cover with foil and refrigerate over night. Bake one hour at 350! Enjoy! P.S. So easy to substitute in this recipe! I made taco meat and used mexican cheese and rotelle tomatoes in this...top with black olives and sour cream and you are good to go! |

Cappuccino Walnut Cheesecake
1 cup finely chopped walnuts (I used pecans! ) 1 cup granulated sugar 3 tablespoons butter, melted 32 oz. cream cheese, softened (4-8oz. pkg.) 2 tablespoons flour 4 eggs 1/4 cup sour cream 1/4 teaspoon cinnamon 1/2 cup strongly brewed espresso (bean optional) 1 teaspoon instant coffee Topping For Cheesecake: 1 cup semi-sweet chocolate chips 1/3 cup heavy cream 1/4 cup espresso 1 tablespoon cocoa powder 1 tablespoon cinnamon sugar to taste 1. Preheat oven to 350 degrees. 2. Combine walnuts, 2 tbsp. sugar, and butter in a bowl and mix well. Pour mixture into a 9-inch spring form pan and press onto bottom. Set aside. 3. In a food processor (I used a blender) combine cream cheese and the rest of the cup of sugar. Mix until light and fluffy and completely combined. 4. Add flour and eggs one at a time. 5. Add sour cream and cinnamon. 6. Dissolve the instant coffee into the espresso and then add to cream cheese mixture. 7. Pour into pan and bake approximately 1 hour. Some ovens may require 10-15 extra minutes. Shake gently to test. Cake will be firm when done and top will be lightly browned. Cool completely. Topping: 1. Heat all ingredients and stir until melted. 2. Drizzle topping over cooled cheesecake. 3. Chill cheesecake before serving. |

Orange Coffee Cake
3/4 cup softened butter 1 1/4 cup sugar 3 eggs 3 cups flour 1 1/2 tsp. baking powder 1 1/2 tsp. soda 1/4 tsp salt 1 1/2 cups sour cream 1 tsp. vanilla 2 T. grated orange peel Cinnamon Nut Filling: 1/2 cup packed brown sugar 1 tsp. cinnamon 1/3 cup chopped nuts Grease tube pan or 2-9x5x3" loaf pans. Cream butter and sugar together. Beat in eggs and vanilla. Mix dry ingredients alternately with sour cream. In tube pan spread about 2 cups of batter. Over this spread about 2 tablespoons of filling. Repeat twice. In loaf pan spread about 1/4 cup of batter iin each pan. Sprinkle with 5 tablespoons of mixture. Repeat five times in loaf pan. Bake 50-60 minutes in 350 oven. Cool slightly before removing. |

Linda’s Deep Dish Brownies
3/4 cup butter 1 1/2 cups sugar 1 1/2 tsp. vanilla 3 eggs 3/4 cup flour 1/2 cup baking cocoa 1/2 tsp. baking powder 1/2 tsp. salt 8 x 8 pan Blend melted butter, sugar and vanilla. Add eggs, beat well with spoon. Combine flour cocoa, baking powder and salt. Add to egg mixture. Spread in greased 8 inch square pan. Bake at 350, 40-45 minutes. I always double it!! (13x9 pan/extra 10 minutes for double recipe) |
