Default Mafiosi speaking

Me and I buddy have always wondered about this.
When you see mafia films, especially films that takes place in New York you have all these guys talk in a very special way. Like a dialect or something.
Instead of "first" they say something like "fiyst" with a YAnkee sound on the r.
Is that a dialect or is it something constricted to some Italian-American parts or what is it?
If you have played the game "Black and White" your evil conscience also speak like that.
