Default Chicken breast?

Anyone care to tell me the proper way to fry chicken breasts? I think I failed.

Use a deep fryer. Stick your hands in there to make sure it's the right temperature. You'll know it when it's ready.

This is how I do it.

1. Soak the chicken breast in a buttermilk, crushed garlic and cayenne pepper brine. Use a Ziploc bag to push the air out.

2. Heat a very odorless fat in a large Dutch oven or electric fryer. I prefer peanut oil, but shortening will work too. You want the temperature to be between 325-350 degrees. If you are altitude you want it between 300-325 or it will burn before the inside is done.

3. Remove the breasts from the bag after 15-30 minutes and roll them in a flour and 1tbsp baking soda mix. Dip back in the brine and roll a second time in the flour.

4. Throw them in fryer for about 20-25 minutes. You want to rotate them after ten minutes or so.

5. Rest on a wire sheet (never paper towels; They will make the skin soggy). And eat when they cool enough to not turn your mouth to leather.
