I put my turkey in a brine, then injected it, then put the rub on and its on the smoker now.

It will be juicy delicious

I made a kick assed tuna samitch the other day because I had a taste for it and the woman was out of the house. It was good, it had capers and all sorts of stuff in it.

Yeah I thought same thing but its more a chemical reaction that allows the meat to trap and hold moisture and flavor. It doesn't come out salty or sweet.

Have a good Thanksgiving everyone. Time to head down the road to sisters to see family. I was going to put my homemade cranberry sauce recipe up but I already seem gay from the brining thing so I will quit before it gets worst!!

I always brine my turkey - and I never stuff it, I fill it with aromatics (onion, apples, celery, cinnamon sticks, thyme, stuff like that - nuke it for a minute or two, and then stuff in the turkey).

Just make certain your turkey is fully thawed before you brine it.

Smoked turkey blows roasted away....I always get outvoted on thanksgiving though because "it's not traditional enough".

If you brine it, what's your cooking method? Does anything work? I guess if you dry it out well, a deep fryer would still be safe?

What kind of wood do you use? I'm not a big fan of mesquite and I was just wondering if you use something else. I was thinking of going with apple and a little bit of hickory on the leftover turkey that I'm going to smoke this weekend.

My pops does the smoked turkey so I'm not sure.

The only time I cook for the holidays is when I do a beef tenderloin on the grill (rotisserie)

Never had smoked prime rib before OU but I bet it's awesome.

sounds like a nice brine. what is your recipe for the oven (assuming you roast it).

I picked up a turkey to make after thanksgiving. we always go to family and I never have very much leftover turkey. I love turkey so i figured I would make one this weekend.

I smoked one a couple years ago with apple and hickory but didn't much care for it.
Any suggestions?
