High defeinition electronic question

i know this is off topic but i have seen a couple of people post these types of threads here before. i need some assistance on some electronics knowledge.
i am buying a high def. TV so that i can watch the playoff games. i bet somebody i would if the broncos made it to the playoffs. so i win all around.
my question is this whole wiring thing.
is HDMI better?
do all HDMI cables carry 1080i or 1080p signals?
would i get the same out of the s-video cable and the digital fiber optic cables?
is there really a difference and how much do you see between hdmi cables?

the salesman are trying to sell me the world and i really dont want to pay for the world. any help for a fellow bronco fan out there>
