Cinnamon Crackle Cookies

1/2 cup butter softened (no substitutes)
1/2 cup shortening
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla (I use bourbon vanilla)
1/2 teaspoon almond extract
2 1/2 cups flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
2 teaspoons cream of tartar
2 teaspoons ground nutmeg
2 teaspoons grated orange peel
1 teaspoon grated lemon peel
1/2 teaspoon salt
Additonal sugar

In a mixing bowl, cream butter, shortening and sugars.
Add eggs and extracts; mix well. Combine the next 8
Ingredients; gradually add to the creamed mixture. Shape
Into 1 inch balls; roll in sugar. Place 2 inches apart on
Ungreased baking sheets. Bake at 350 for 10-15 minutes
Or until lightly browned. Yield: about 6 dozen.

These freeze really well!

Baileys Irish Cream

1 1/2 cups whiskey
1 pint heavy whipping cream
1 can sweetened condensed milk
2 eggs
2 TBSP. Hersheys chocolate syrup
Almond extract

Blend together...

Can be kept up to 30 days!

Cappuccino Mix

1 cup non-dairy creamer
1 cup instant chocolate drink mix
2/3 cup instant coffee granules
1/2 cup sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Combine ingredients. Blend well. Store in airtight container. Add 3 TBSP mix to 3/4 cup water...try adding peppermint schnapps for a holiday twist!

Cocoa Mix

2 cups powdered milk
1/4 cup unsweetened cocoa
1 cup powdered sugar
dash of salt
1/3 cup non-dairy creamer
(can use any flavor!)

Add: 4 TBSP. mix to 1 cup boiling water.

This would be easy to triple the batch and store in an ice cream bucket for those cold tailgate mornings!

We always make this for goodies baskets for friends and also bring it to some of the tailgaters!


Samon Log

1 can of Salmon
1 lb cream cheese
1/3 cup finely chopped onion
1/4 to 1/3 tsp liquid smoke
4-6oz sliced almonds
1 to 1-1/2 cup dried parsley

Drain and de-bone the salmon
bring cream cheese to room temp.

Combine Salmon, cream cheese, onion, liquid smoke in mixing bowl.
Refrigerate for 2 hrs+

Lay out a large piece of wax paper
cover with parsley
sprikle almonds on top of parsley

Take 1/2 of salmon mixture and place on top of wax paper
using the paper, roll into a log.

Serve with crackers!

This is easy for Christmas Eve...

Taco Soup

2 lbs. hamburger, browned
1 cup diced onion
2 8 oz. cans tomato sauce
2 cans kidney beans
2 cans mexican diced tomatoes
2 cans corn with peppers
2 pkg. or less taco seasoning

Throw into a crockpot for 3-4 hours and serve with shredded mexican or taco cheese, scoop tostada chips and sour cream. (or whatever you prefer!)

Peanut Butter Fingers

1 Pointer Finger
1 Index Finger
1 Jar Skippy Peanut Butter

Take Pointer Finger and Index Finger and insert same into jar of Skippy Peanut Butter. Remove same and eat.
Yeah I have no recipes as I can't cook to save my life. I will get with my wife as she has some damn fine recipes!

You could dip a hershey bar in there instead of your finger...just for a little variety!

Dark Chocolate Hazelnut Biscotti

Cookie:
1 cup sugar
2/3 cup butter, softened
1 12 oz pkg. Nestle Tollhouse semi-sweet chips, melted
3 eggs
1 tsp. vanilla
2 3/4 cups flour
2 1/2 tsp. baking powder
1/4 tsp. salt
3/4 cup finely chopped hazelnuts or almonds

Chocolate Coating:
1 12 oz. pkg. Nestle Tollhouse semi-sweet chips
2 Tablespoons shortening

1. Heat oven to 350. Combine sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Add 2 cups meled chocolate chips, eggs and vanilla; continue beating until well mixed. Reduce speed to low, add flour, baking powder and salt. Beat until well mixed. Stir in hazelnuts by hand.

2. Divide dough in half. Shape each half into 14 inch long roll. Place rolls five inches apart onto ungreased cookie sheet. Flatten each roll to 2 inches wide. Bake for 25 minutes or until set. Cool on cookie sheet for 15minutes.

3. Reduce oven to 300. Cut rolls diagonally into 1/2 inch slices with serrated knife. Place onto cookie sheet, cut-side down. Bake for ten minutes. Turn slices; continue baking for 12-15 minutes or until dry and crisp. Cool completely.

4. Melt 1 bag (2 cups) chocolate chips and shortening in 1 quart saucepan over low heat, stirring until smooth. Dip cookies halfway into chocolate. Place cooling rack over waxed paper until set.

4 1/2 dozen cookies.
