I'm going to agree that it is a bit overrated, but it is pretty awesome. It has a ton of flavor - good flavor - and a seemingly endless amount of applications. Just yesterday we were in a donut shop near our place they were sold out of the donuts with bacon. It is pork, so it's cheap and easy to find, has a lot of flavor and can impart moisture, aromatics and delciousness to any number of food products.
