I picked up a turkey to make after thanksgiving. we always go to family and I never have very much leftover turkey. I love turkey so i figured I would make one this weekend.
I smoked one a couple years ago with apple and hickory but didn't much care for it.

I run oil lightly all over the bird. Then I use a dry rub all over the bird and under the skin. Pull the skin back, rub seasoning under there, then replace skin.
A lot of times I just used store bought rubs. Not an expert on making my own rubs so maybe someone else has some good ideas?
Then when I bake I do it breast down for the first half then flip the bird. Cover the wingtips in foil or something and tuck them away so they don't get burned.
