Tofu comes in a bunch of different hardnesses. I would think the soft kind would blend up pretty well. It also works well for scrambles. You scramble it basically like you would scramble eggs and add onion, peppers, etc.
I was a vegetarian for about 6 years and exposed myself to lots of foods I would not have tried normally. Of course that was before I discovered how much I really like beef, chicken, and bacon.
