Because the league destroyed all the evidence.

An absence of evidence is not evidence of absence.

If proof no longer exists, you can't use the proof to prove something.

Unfortunately, sports fans are content to ignore problems with their favorite leagues.
All that has to be done in damage control by the NFL and their media partners is to basically set the issue aside as they stand in awe of how good the Patriots are.
It's just like the ref situation in the NBA. It will not be appropriately addressed (Joey Crawford was rehired!) and will not become transparent. The mindless masses will continue to be awed by LeBron James dunks on sportscenter and will continue to fork over their cash (their power) for jerseys.

Let's say the NFL DID find evidence the Patriots cheated in past Super Bowls? What do you do about it? Nothing. You can't take the trophies away. All you can do is punish them like the NFL did and prevent it from happening in the future...

You can, and you should take their trophies away.
It's hard to imagine that there were not information caches on St Louis, Carolina, or Philly within the Patriots fortress of cheatitude. If there was any information therein, every victory against said teams becomes questionable. Especially the SB victories.
Is it any wonder that the underdog Patriots were able to surprise unsuspecting teams with stifling defensive performances and opportunistic offensive execution?
Boy...it sure looks bad from the outside.

It is/was amazing how they took no-name players and made them into instant defensive stars.

See, I already said the league would probably just brush it under the rug. Too embarrassing, too many consequences. It's just too big. And the video is just the tip of the iceberg.
The owners do not want to show too much light onto this. In the end it's business... and Cheating mars the integrity of the game. And that's bad for business.
It's now widely said by coaches and players that this has been going on since 2000. Why would they use all this cheating in the regular season and then stop for the playoffs and Super Bowl.
You gotta be real niave to think that.

It should be more than obvious that the Pats have been cheating for a long time. The teams that the Pats struggle against are the teams with elaborate game planning (e.g. Denver). The Colts were owned by the Pats for a long time, because stupid Manning checked into a new play everytime, verbally announcing the call and thus allowing the Defense to adjust since they knew the signals. I always disliked the Patriots because I was jealous of their winning, now I know they just cheated to get to where they are now. I dont think we'll see any result of the tapes being destroyed for a couple years, as it will probably take that long to circulate in new coaches & playbooks. I forsee the Pats being nobodies in about 3 years, as long as the NFL keeps an eye on their cheating.

Just curious... why would sweeping this under the rug be a good thing? I know Pats fans are wishing for this but why would any other football fan stand for this let alone wish for it.
