Does anyone have any good Chocolate Chip cookie recipes? I'm obsessed with them and am so tired of buying them or begging my relatives to bring me some that I'd like to bake my own. I like the ones that are big, flat and round - not those ball shaped ones that are all small that you see at group functions.

It is very good, but the best ones are the premade Nestle ones! No mess just bake. a BIG hint!!! Don't cook them all the way, when you take them out of the oven a few minute early, with the sugars the will still bake. Which is usually why most are hard. So take them out early.

2 cups flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup butter, melted
2 tbsp instant coffee granules
1 cup firmly packed brown sugar
1/2 cup sugar
1 large egg
1 egg yolk
1 (12 oz) package semi-sweet chocolate morsels
1 cup walnut halves (optional)

Combine first 3 ingredients; stir well. Stir together butter & coffee granules until dissolved. Combine butter mixture, sugars, egg & yolk in a large bowl. Beat at medium spead with mixer until blended. Gradually add flour mixture; beat at low speed just until blended. Stir in chocolate morsels and walnut halves.

Drop by heaping tablespoonfuls 2 inches apart onto lightly greased baking sheets. Bake at 325° for 12 to 14 minutes. Remove to wire racks; cool completely.

Make sure to pull the cookies out at the said time. They may not look done, but they are. If you cook them longer they will dry out and get crunchy.

This is awesome. I can't wait to try it. The advice about pulling them out early really helps because some of my cookies I've pulled when they are just getting brown and then they end up being too hard.

Some more questions:

Does the coffee make the cookies taste coffee-ish? I'm LDS and don't drink coffee.

What are the advantages of using margarine, butter and shortening?

Baking powder or Soda?

It doesn't taste like coffee at all, but it definitely adds a great flavor.

I use margarine because my wife is lactose intolerant. The cookies still taste great.

Use what the recipe calls for, baking powder and soda do different things.

Neiman Marcus Cookies

You can half this recipe...

2 cups butter
2 tsp. soda
5 cups blended oatmeal
(I use the coffee grinder to do this)
2 cups brown sugar
1 8 oz. hershey bar, grated
2 tsp. baking powder
2 tsp. vanilla

4 cups flour
2 cups sugar
24 oz. chocolate chips
1 tsp. salt
4 eggs
3 cups chopped nuts (I use pecans)

Measure oatmeal and blend in blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla; mix together with flour, oatmeal, salt, baking soda and baking powder. Add chocolate chips, hershey bar and nuts. Roll into balls and place two inches apart on cookie sheet. Bake for ten minutes at 375 degrees. Makes approx. 112 cookies.

The type of fat you use largely determines the type of cookie you end up with as a result of the different melting points. Butter will make a thin, somewhat crispy cookie, margarine a little less so, and crisco (with the highest melting point) will give you a round chewy experience. Remember, baking is a science - cooking is an art. Which is to say anyone willing to study a bit can learn to bake. Finding a recipe which is listed by weight as opposed to volume will also make a big difference.

Are they chewy or cake-like?

Kind of in between - Best with walnuts

1/2 c butter
1 c sugar
2 eggs
1 t vanilla
2/3 c flour
1/2 c cocoa
1/2 t baking powder
1/2 t salt
1/2 c chopped walnuts

8X8 pan - 350 for 30 min - frost if you like (of course you double the recipie or they will be gone before they cool off. :)

Best cookbook ever - Betty Crocker Cookie Book (red cover with pictures of asst cookies) originally printed in 1963 but reprinted a couple of years ago after the originals were selling for $300 at used book stores.
You can probably find the new print on Amazon or Barnes and Noble.
