The Good News: The wife got a job at the state capital reporting on events/bills/etc for a publishing company last week.

The Bad News: Since the session just started they will be working late for the next month+. So Rascal gets to make dinner during that time frame.

The Even Worse News: I am trying to lose weight so that means I can't order pizza every night or go get fast food.

First my cooking capabilities are limited. If it takes more then 30 minutes to prepare and calls for sifting, or other complicated things there is a 90% chance that I'll screw it up.

Second, the wife is not much of a cooker either and we have very limited recipes available.

So, in order to prevent me from starving and remaining in the good graces of my wife, I come to the OrangeMane community for help.

I realize most of you poor bastards are guys like me, but I'm guessing that maybe one or two of you guys know something about cooking or that one of the wonderful females on the board realizes my plight (and my wife's) and takes pity on me.

So there you have it...

What should I make for tonight or anyother night in the foreseeable future?

alright here is a quick one that gets me through a meal from time to time...

Grab a couple of chicken breasts
Fire up the Geaoge Forman grill
Cut them up throw them over a bed of leattuce
add you favorite dressing (personally i use salsa)

Nothing fancy, but it keeps the calories down, the protien up, and tastes good enough

Congrats on joining the "Spam- Its what's for dinner" club Rascal Ha!

I would try and keep the transfats to a minimum myself. Breads, carbs, sugars, etc.

I work about 70 hrs a week and dont have time to cook. My wife works about 55 hrs a week and wont cook. We got a crockpot with a timer about 2 months ago and it has to be the most kick ass invention ever. Quick and easy and there are about a thousand recipes that you can grab off the net. Some of them are actually good for you. I hope this helps.

Make it egg drop soup and it's killer!

I've been surviving on egg drop soup for months. I ordered some busisman lunch Sezuan Beef and what came back for 4.50 freaked me out..they had chunks of beef that would make a gorilla choke and it was very mild. Huge chunks of meat. Huge pile of seasoned rice and an egg roll for 4.50.

I have been working on it for two days It's not conquered.

Chinese is always cheaper at lunch. That's my advice...I don't think my body can't tolerate Pizza anymore.

What do you like to eat? I was single before, so I learned to cook. Also reading cookbooks steps you through what to do, on easy stuff too.

If you like food from India, I have a recipe called Chicken Tikka Masala that I swear, everyone that tries it, loves it! It is easy to make too.


2 packs of chicken strips,chunks (already cooked and cut up)
8 oz. heavy cream
8 oz. tomato sauce
1 tsp. chilli powder
1/2 teaspoon cumin
1 small/medium jalepno (chopped/diced pretty small, like in one of those chopper things)
1 teaspoon minced garlic
1 teaspoon butter

Melt butter in a pot, add garlic and jalepeno and saute, but do not brown.
Add all other ingredients except chicken and stir/mix well. Bring to a boil for about 3 to 5 minutes, then add chicken.
Cook/simmer for about 10 minutes with chicken in.

make some rice and serve over rice.

I also use tortillas, the India'n places I ate it at have this bread called NAN, but it is liek a thick tortilla sorta.

Add or subtract spices as you wish. I like hot stuff, so I spice it up a lot more.

Haha that losing weight part is a gift and curse.

It takes a lot of choices of the menu so you don't have to ponder much, but since your cooking skills are limited the taste is gonna suck and you'll be wondering what to do all the time.

OK, this is easy, but takes about an hour to cook.

1 lb. hamburger
1/4 cup minute rice
pepper, salt, oregeno or whatever spices you like
3 bell peppers

make a meatball with all the stuff above mixed in (not the bell peppers tho). Clean and hollow out the bell peppers. Drop the meatball in them, bake at 375 for about 1 hour

And if you want to loose weight, I am the King of low carb tastey food, I'm diabetic so I always watch my carb intake!

Here you go, the easiest recipe in the world.

Hibachi Chicken

Get some chicken breasts, cut them up into cubes, place them in a frying skillet with some oil, cook the chicken, add salt, black pepper and garlic powder for flavor. Add some kind of vegetable like brocolli or mushrooms maybe even some onions, and finally add soy sauce at the the end.

serve with white rice...takes 15 minutes to cook and if you know how to cook chicken, then you are good.

Easy weight conscious stuff. Spaghetti with wheat pasta, soup and sandwhich, turkey burger with no bun throw in some veggies.Steak with mashed cauliflower instead of potatoes.Taco salad........

My biggest suggestion is Crockpot recipes...you throw it all in there before you go to work...turn it on low...and come home to dinner!

Even chili in a crockpot is easy! And, if made right, can be fairly healthy. Other than that...chicken stir fry (you can even use the frozen vegie packs in from the store) or my favorite...chicken fajitas! VERY easy to do...and again you can get the vegies all cut up from the frozen section of the store. But, if you like to do your own veggies...takes 10 minutes tops to cut them up. Throw on a couple of low fat tortillas, and spanish rice (skip the saute) and you have a meal. Make sure to saute it all in water or non fat cooking spray. Leave out the oil! Experiment with different seasonings to see what you like!

Our grocery store even has the veggies, peppers, onions and stuff in a "fajita" package...fresh stuff already cut up and ready to go!

...and olive oil ...although high in fat...is a healthy fat.

Tacos are easy, especially if you buy pre-grated cheese and packaged salad (although it doesn't take that much longer to shred the lettuce and cheese). Just brown and season some ground beef, serve in a corn or flour tortilla with cheese, lettuce, and tomato... add salsa , perhaps some sour cream or guacamole and you're good to go.

It's also easy to use the same stuff and make a taco salad...

Easy Peasy

Cook up a cup and a half of brown rice (more nutritional value than white)
Steam (or cook) a cup of your favorite veggies

Stir in 1 can of cream of chicken soup
1 pouch chunklight tuna
Tablespoon of butter
some of your favorite cheese
toss in the veggies at the end.

It's like a poor man's version of Chicken a la King. You can make a pretty huge meal for yourself for about 4 bucks

Wife and I both work many (and odd) hours so we eat on the run many times and need to make something easy kids iwll eat alos.

Crock pots are very easy. Throw in a chunk of meat and a little of what ever liquid you want (water, BBQ sauce, soup), any veggies you like and plug it in.

Another easy favorite is to take some of the Tyson, grilled chicken strips (the cooked but unbreaded kind), dump them in a baking dish, dump a can of green chilli's on them and maybe a little salsa, cover with shredded cheese and throw it in the oven till it is hot and the cheese is melted - 15-20 minutes. Serve with guachamole which is just a smashed avacado with whatever spices you like. I like garlic powder, cumin, green tobasco and red tobasco. You can eat it with or without tortillas.

I can make fish sticks & tater tots in the Oven if Abby helps me & I remember to use PAM.

Oh & the Mac & cheese with the sauce in the package I can do, I can't do Mac & cheese if I have to mix the Milk, Butter & cheese packet I hose it up everytime & throw it away.

Other wise we wait for the Wife to come home or go have a KFC Feast.

I made a killer batch of Chili on Superbowl Sunday..Ate it for 3 straight nights! Cheap, damm good, and you can stretch it out a few meals...Freezes nice too.

You guys are getting way too complicated.

And too many of your suggestions involving annoying things like cleaning up dishes and stuff.

Rascal, I hear your pain.

First of all, get yourself a good BBQ grill. BBQing stuff helps get rid of excess fat from a lot of meat, and it tatstes pretty good.

You can BBQ chicken breasts pretty easily, and afterwards you can store them in the fridge and warm 'em up in the microwave if necessary.

Brats, burgers and steaks are all good.

You can also wrap up potatoes (or sweet potatoes) in tin foil and BBQ them too, though they take a little longer. BBQd corn on the cob is good too.

Macaroni & Cheese is pretty easy to make and you can buy them in those little boxes where they've done most of the work. Main thing here is that it is really, really cheap. Plus, it's not too bad warmed up. And not too many dishes to worry about. Boil up some little smokeys and mix them in if you feel the need for meat.

If you like Tuna sandwiches, go to the deli and buy some tuna fish salad. Now this is expensive. But you can stretch it if you pick up a can of real tuna and mix in a little miracle whip & a dash of relish.

Salads are easy. Just don't get too fancy too soon.

One of my favorite things is sausage dressing. You can buy great big packs of pre-seasoned Thanksgiving style dressing at the store. Not too expensive. Cook up a roll of Jimmy Dean sausage (crumbled up). Then just folow the instructions (adding butter chicken broth and some chopped up celery and onions) and just bake it in the oven. You can eat it for days - - and you don't even need a turkey!

buy you some pre-packaged salads

get that already cooked chicken fajita meat

Fast, easy dessert dish:

Get one large bowl
One large strainer
One big spoon

Go down and buy several cans of chunky fruit: pineapple chunks, pear chunks and Peach chunks. You can also get cans of berries & cherries if you're into that stuff.

And a few bananas.

Plus a bowl of cool whip (low fat if you're feeling the need)

You can store the cans for a long time.

But when you're ready, just pop open the cans and pour the fruit into the strainer, allowing the juice to drain into the sink.

Then plop the chunky fruit into the serving bowl.

Peel a couple bananas, chop them up and toss them in. (Throw the skin in the trash)

Add in the cool whip and stir it up.

This takes less than five minutes.

If you wanna get wild, crush up some walnuts and stir those in too.

Instant fruit salad.

One uncooked 2 pound roast, season to taste...one onion. some carrots..couple taters cut in half, can of drained tomatoes, one cat...live.. just to see him launch to the ceiling and cling...warning..only lock down pressure cooker can keep kitty contained...

Cook relatively slow, you can cook a roast for a good 8 hours on low.

cut up)
1 tbsp. cooking oil
1 med. onion sliced
1 10 3/4 oz. can cream of celery soup
1/2 tsp. dried oregano, crushed
1/4 tsp. thyme, crushed
1/4 tsp. pepper
Hot cooked noodles (egg noodles or No Yolks) or rice

Trim fat from round steak. Cut into serving size portions. In a skillet brown meat on both sides in hot oil. Place onions in 3 1/2-4 quart crockpot; place meat atop onion. In small bowl combine soup, oregano, thyme and pepper. Pour over meat.

Cover: cook on low setting 10-12 hours or on high 4-5 hours. Serve over noodles. Serves 6.

Heres my recipe for the dinner of champions!

1. Get those yellow corn tortillas (usually found at the grocery store!!!)
2. Cut them up into chip size triangles.
3. Deep fry them.
4. Once deep fried, put on a plate.
5. Get Rosarita FAT FREE refried beans and put em on the chips.
6. Get Velveeta FAT FREE cheese, cut/tear it up, put it on.
7. Get cheese sauce, douse it all over your plate.
9. Get shredded beef, fry it, add to your plate.
10. Get fistfuls of shredded cheese and just keep sprinkling to your plate until your meal now resembles a small mountain.
11. Put this masterpiece in the microwave for 4:30.
12. Enjoy one the best meals youve ever had.
13. Tell the wife you had a salad. :thumbs:

The wife didn't get home till 9 as they took forever in session yesterday for the long weekend (they don't work on friday's...must be nice).

Her boss ordered in BBQ since they worked so late. She ate there and then brought a bunch for me.

I think on Monday I'll make that recipe you provided.

Stuffed Peppers

4 bell peppers (green, yellow, orange or red ;D )
1 box Uncle Ben's Original long grain/wild rice (6 0z. with herbs )
1 8 oz. can oregano, basil, garlic tomato sauce
1 lb. ground beef
chopped garlic (you can buy it already chopped in a little jar)
salt and pepper to taste
parmesan cheese

1. Make rice according to package.
2. Brown ground beef with garlic; add salt and pepper. Drain.
3. Mix ground beef and rice together with tomato sauce.
4. Put rice/beef mixture in peppers...should be enough for four peppers. Sprinkle parmesan over the top.
5. Put in an oven safe dish.
6. Cook at....let me get back to you...I need to double check. ;D

Sassy is on it. Not something to pig out on, but that's a good recipe and is ready to go when wifey comes home. Go to the store and get some low fat dressing and that premade salad too. That's super easy. Throw it on a couple bowls, add a little shredded cheddar or cheese cheese of choise (I like Halo Swiss) and choice of dressing.

Sassy's potroast with a salad you have dinner waiting in 5 minutes of when she gets home.

You can also get those teeny carrots...no fat and good in pot roast...Sassy, don't forget the carrots!

I know how to make homemade egg noodles but it's probably over his head....just throwing in some dried ones will work but you can buy frozen ones that are better. They probably would overcook in a crock pot tho. Use the dry.

To make egg noodles that are great, crack a couple eggs and equal or a little lesser milk, and season to taste, then get to work (this allready sounds over Usama's head)...and knead in good flour, then roll with vigor and then fold and cut...put in salted boiling water for about 7 minutes to taste...not too long they will get gummy/slimy.

It's alot of work rascal...enjoy...

If you want to make something that is a mock specialty, add in one can Cambells cream of Chicken, Some cream of mushroom or celery depending on taste, and you should of pressure cooked and cubed some white chicken. That should keep you busy for a couple hours...

Now onto my Enchilada recipe...heh...

I went over to Spirit Lake to the wall-mart and went to Taco Johns because this two cow town has no mexican at all...a freakin' taco was 3.99 and a Burrito 5.19. A pop is 1.89...WTF? This is Iowa. I'm sure they were good size for for fast food, that's absurd. Taco Bell a burrito is like 129-1.99. I can afford it but simply refused to pay that and told them so. 4 bucks plus tax for a taco?

I forgot about this chicken noodle caserole dish, it is easy and lasts a good couple meals.

1 bag egg noodles
1 can chicken (like tuna, but the large can)
2 cans cream of mushroom soup
1 can mushrooms
1/2 to 3/4 can peas
pepper to taste
garlic powder to taste
Shredded cheese

Cook noodles, drain/strain them and put back into the pot. Mix the soup, shrooms and peas together and pour over noodles. Add some spices, mix it all up real good (sometimes I mix 1/4 can water with the soup so it is easier to stir around, then pour that over the noodles).
Put into a baking dish you can cover, top with cheese and bake at 350 for about 10 minutes covered. Remove cover and bake another 5 to 10 minutes.

I like to add some chipotle to mine, and a little curry or cumin sometimes to spice it up a bit.

Stuffed Peppers

4 bell peppers (green, yellow, orange or red ;D )
1 box Uncle Ben's Original long grain/wild rice (6 0z. with herbs )
1 8 oz. can oregano, basil, garlic tomato sauce
1 lb. ground beef
chopped garlic (you can buy it already chopped in a little jar)
salt and pepper to taste
parmesan cheese

1. Make rice according to package.
2. Brown ground beef with garlic; add salt and pepper. Drain.
3. Mix ground beef and rice together with tomato sauce.
4. Put rice/beef mixture in peppers...should be enough for four peppers. Sprinkle parmesan over the top.
5. Put in an oven safe dish.
6. Cook at....let me get back to you...I need to double check. ;D

Bake at 350 for about 15 minutes (depending on how well done you want your peppers!)

Shad's world famous chicken is as follows:

get a bake pan and pour about a fourth to a half a bottle of lemon juice in to pan (depends how big and deep pan is) The lemon juice will come about half way up on the chickem breast.

I then take skinless boneless chicken breast and layer spices on top of the breast. I happen to use carribean jerk spice, hot salt, a little garlic powder and any other spice I am in the mood for.

Then I warp each chicken breasts with bacon and place in the lemon juice

Then I bake at 350 degrees and then wait about 30 min to an hour.
Cut into ckicken breast to test doneness.

Also I live in arkansas delta so altitude will play a role on timing so just check it by cutting into chicken and it should be white in middle.

And then store the rest you don't eat in fridge and makes great sandwiches the next day so two meals in one.

Fried Bread Tacos

This are awesome and easy!

1 pkg. frozen dinner rolls (or just frozen bread dough cut in chunks)
1 pkg. taco seasoning
1 lb. ground beef
shredded lettuce
shredded cheese
salsa
taco sauce
sour cream
(or whatever you put on your tacos!)

Thaw dinner rolls on a cookie sheet sprayed with oil and let raise about
3 hours. Cover with sprayed wax paper so they don't dry out.

Make taco meat according to directions on package.
Set aside.
Heat approximately 1 inch of oil in skillet on medium heat. Spray rolling pin (you only need to do this once so they don't stick to the rolling pin) with oil and roll out 1 dinner roll at a time on waxed paper. Throw in skillet and turn...this doesn't take long...about 5 seconds each side. Let drain on paper towel. Add your other ingredients. Enjoy!

Grill it
Wash it down with a beer

If you really feel like working get a bake potato and slam it with a fork. Stick it in the microwave for about 10 minutes. Add butter and sour cream.

Steak/Potato/Beer a winning combination!

INGREDIENTS:

5 spice bottles
Meat
Garnish

PREPARATION:

Get blindingly drunk.
Open pantry and pull out first five spice bottles with red tops.
Get meat from fridge. May have to steal from dog.
Pour generous portions of red capped spices onto meat.
Knead.
Cook.
Garnish with anything yellow. Snow not reccomended

OK, this is easy, but takes about an hour to cook.

1 lb. hamburger
1/4 cup minute rice
pepper, salt, oregeno or whatever spices you like
3 bell peppers

make a meatball with all the stuff above mixed in (not the bell peppers tho). Clean and hollow out the bell peppers. Drop the meatball in them, bake at 375 for about 1 hour

And if you want to loose weight, I am the King of low carb tastey food, I'm diabetic so I always watch my carb intake!

I put on another 15 pounds with our latest addition (plus the move and the company paying up to $75 a meal while my wife was pregnant... that really didn't help) but anyhow, I need to get back down to my regular fighting weight which is right around 200. Really, I'd like to get down to 190 which is what I weighed when I graduated HS and entered the Air Force.

I'm all over spicey, so bring it strong. If you'll PM me I'll set you up with my email address and I may even have a few recipes that you'd enjoy yourself. Chili is my speciality so if you like it I can hook you up quite nicely!


Rascal, let me know if you like Chili. I've got an easy recipe that I can give you. Actually, I'm thinking about making a pot for the evening. Don't know how good it is for losing weight but it's easy, tastes great, and you can make enough to last you for a couple days afterward as well.

Side of pork loin, ribs, and kiebalsa (I'm sure somebody hit em with a beer while grilling).........mush together and serve

6 Slim Jims or other beef snack sticks
1 can beer
1 egg
1/2 cup peanut butter
PREPARATION:

Mix ground beef with one half of the can of beer. Drink the other half.
Knead in the egg and peanut butter and season the mixture with salt and pepper.

Form the mixture into sausage shapes around the beef sticks.

Nuke on hot grill until done using the beef stick as a turning skewer.

Serve in hot dog buns and top with your favorite condiments

Jambalaya is fast and good.

Zatarains Jambalya mix

Sausage
Chicken
shrimp

you can add all three meats or just one.

Comes preseasoned, just bring the mix to a boil and put in the meat. If you use chicken or shrimp the times change, and with Chicken I just cut it up, season it with Cajun Seasoning grill it and add to it.


Blackened Chicken and Green Chiles

Rub a chicken breast in Blacken Seasoning with a healthy oil (I prefer peanut oil). Preheat an iron skillet make it really hot. drop the chicken on it and flip it over pretty quickly. Then cook like normal. Cook for 15 minutes and than add whole green chiles. cover with american or swiss cheese and server piping hot and yummy.

I made Toasted Cheese samiches this weekend for Abby & I while Karen was shopping & this time I didn't burn them! I am progressing as a cook.

I am glad I bought Karen the under the cabinet TV for Xmas, it makes cooking go by quicker.

Simple but not easy...grilled cheese and tomato soup...

Butter both sides of good cottage bread, then mayo in the middle...thin velveeta inside...flop in the skillet and flip when browned...duh...

Take a can of cambells tomato soup...one half water, one half milk and heat...sprinkle some parmaesan cheese in the soup with some pepper...

It makes my cow cry....

It should give your cholesteral level a boost.
