Pecan Pie Cookies

Cookie:
1 cup firmly packed brown sugar
¾ cup butter, softened
1 egg
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder

Filling:
1 cup chopped pecans
½ cup firmly packed brown sugar
¼ cup heavy whipping cream
1 teaspoon vaniila

1. Heat oven to 350. Combine 1 cup brown sugar and butter in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add egg and 1 teaspoon vanilla. Continue beating until well mixed. Reduce speed to low. Add flour and baking powder; beat until well mixed.

2. Shape dough into 1 ¼ inch balls. Place 2 inches apart onto ungreased cookie sheets. Make indentation with thumb; rotate thumb to hollow out slightly.

3. Combine all filling ingredients in a small bowl; fill each cookie with one rounded teaspoon filling. Bake 8-12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

Favorite family tradition: Getting drunk off my arse and telling everyone, "Ok, get out! Christmas is over!" :) j/k

I make an Italian buffet for Christmas so that we don't have to spend the day in the kitchen. I make two pans of Lasagne. One with meat and one without and 2 crockpots full of meatballs. They can simmer in the crockpots all day on low and be snacked on thoughout the day. I buy a few bags of Italian rolls for the meatballs and provolone cheese to melt on them.

The wife makes a couple pumpkin pies and sometimes those round walnut cookies rolled in the powdered sugar. I do the cooking but, I don't like to bake so she takes care of that. She has an excellent pumpkin pie recipe. You have to try this:

Pie crust: Pillsbury pie crust

---------------------cream cheese layer ingredients:-----------------------

4oz. cream cheese-softened

1 tbsp. milk

1 tbsp granulated sugar

1 1/2 cups Cool Whip

---------------------------Pumpkin Layer----------------------------------

1 cup cold milk

6 ozs vanilla pudding mix

1 3/4 cup pumpkin

2 tsp. cinnamon

1/4 tsp. ginger

1/8 tsp. cloves

---------------------------------------------------------------------------------------

Bake pie crust as directed on box.

To prepare cream cheese layer, combine cream cheese, 1 tbsp. milk, sugar and Cool Whip in a mixing bowl. Spread onto bottom of crust.

To prepare pumpkin layer, Combine the 1 cup of milk, pudding mix, pumpkin, cinnamon, ginger and cloves in another bowl. Spread over cream cheese layer. Refrigerate 4 hrs. or until set. Top with Cool Whip.

Now some might think that cream cheese and vanilla pudding with pumpkin is odd. That's what I thought until she made it several years ago and now I consider it the best pumpkin pie you can eat. She has to make several of them because everyone in the family wants to take one home with them. They love it. Enjoy!

1 part chilled glass

Instructions - carefully pour ingredients from 12 ounce container into chilled glass, discard container, smell aroma from chilled glass, gently lift glass to mouth, tilt glass at slight angle until indredients pour out and enjoy!!!!!

Great Carrot Bread

Usually make 20-30 loaves and give them away at Christmas

3 eggs
1 C Vegatable Oil
2 Cups grated carrots
2 cups packed brown sugar
3 cups flour
1/4 tspn baking powder
1 tspn salt
1 tspn baking soda
1 tblspn cinnamon
1 cup chopped walnuts
1 cup raisins (usually use the gold ones)
8 oz crushed pineapple - drained

Beat eggs till foamy.
Add Oil, Carrots and sugar - Beat well
Mix in Flour soda, salt, baking powder and cinnamon
Sir in nuts raisins and pineapple

Pour in greased and floured loaf pans and bake at 350 for about 1 hour (depending on pan size) until knife comes out clean. Cool before removing from pans

Makes 2 extra large loaves or several smaller.

Wrap in foil and let sit in the refrigerator a few days to really bring out the cinnamon flavor. Can be frozen for later.

I love extra sharp cheddar cheese fondue and make tiny meatballs for dipping.

2 tbsp. butter

2 tbsp. flour

2 cups cold milk

2 16oz extra sharp cheddar cheese blocks. Shred in food processor.

Make a roue (sp?) by melting butter in saucepan, add flour and cook for a minute or two to cook out flour taste. You can season flour too if you wish. Pour in milk and continue stirring and when milk begins to bubble lower heat and continue stirring another minute until mixture thickens. Add shredded cheese and melt. You can also add some crushed red pepper or whatever if you want to kick it up a notch.

Salmon Log

1 can Pink Salmon (drained and de-boned)
1 block Philly cream cheese (softened)
1 cup chopped sweet onion
a couple of drops of Liquid smoke (do not overdoo this!!!)
a dash of black pepper

Mix all above in bowl and refridgerate for several hours

Lay out sheet of wax paper
cover paper with generous amount of dried Parsley
cover parsley with 1/4 to 1/2 cup sliced almonds

Shape log into "tootsie roll form" (you should be able to do at least two for each batch)

place on wax paper and roll in parsley/almond mixture until covered.

Add some crackers and enjoy!

Jose Cuervo Christmas Cookies

1 cup of water
1 tsp baking soda
1 cup of sugar
1 tsp salt
1 cup of brown sugar
1 cup lemon juice
4 large eggs
1 cup nuts
2 cups of dried fruit
1 bottle Jose Cuervo Tequila

Sample the Cuervo to check quality. Take a large bowl, check the
Cuervo again, to be sure it is of the highest quality - pour one
level cup and drink.

Turn on the electric mixer...Beat one cup of butter in a large fluffy
bowl.

Add one teaspoon of sugar...Beat again. At this point it's best to
make sure the Cuervo is still OK, try another cup ..just in case.

Turn off the mixerer thingy. Break 2 leggs and add to the bowl and
chuck in the cup of dried fruit, Pick the frigging fruit off floor...
Mix on the turner. If the fried druit gets stuck in the beaterers
just pry it loose with a drewscriver. Sample the Cuervo to check for
tonsisticity.

Next, sift two cups of salt, or something. Who giveshz a sheet. Check
the Jose Cuervo. Now shift the lemon juice and strain your nuts. Add
one table. Add a spoon of sugar, or somefink. Whatever you can find.

Greash the oven.

Turn the cake tin 360 degrees and try not to fall over. Don't forget
to beat off the turner. Finally, throw the bowl through the window,
finish the Cose Juervo and make sure to put the stove in the
dishwasher.

Bailey's Irish Cream

1 1/2 cup whiskey
1 pint heavy whipping cream
1 can sweetened condensed milk
2 eggs
2 TBSP. hershey chocolate syrup
Almond extract

Blend together...can keep refrigerated up to a month.
